Who we are
Local baker, Mark Risch, has been baking for years at restaurants around Columbia and already has a successful bread and baked goods business, Como Dough. He's been selling his goodies at Farmers' Markets and local businesses. His cinnamon buns have quite a following in these parts. It's been his dream for years to put a wood fired pizza oven on a trailer and go mobile. Nothing cooks pizza like a good fire. Mark's been tweaking his pizza dough recipe to perfection. It's delicious!! Now he's bringing the art of wood fired cooking to Columbia ... offering artisanal pizzas and a variety of other menu items cooked fresh in the wood fired oven.
How we do it
Our oven is a Forno Bravo and it does a great job. It runs at about 900° and cooks a pizza in roughly two minutes. Our oven is mounted in our pizza trailer. By making the pizza oven mobile, Mark is bringing the pizza to you making the possibilities almost endless ... private parties, festivals, catered events and the streets of Columbia.
We're using local, fresh and organic (as much as possible) ingredients. We're trying to support local businesses and agriculture as much as we can.
Look for our truck at the Columbia Winter Farmers Market outside the Parkade Center at 601 Business 70 West (map to the market). We'll be there with our pizzas and fresh baked goods each Saturday from 9 a.m. - noon (November - March).
Weekday lunches, look for our brightly colored kiosk in the Parkade Center parking lot.
